Mandrarossa – Urra di Mare – White wine made from 100% Sauvignon blanc from Contrada Urra di Mare, located near the sea in Menfi, on the southwestern slopes of Sicily 80–350m above sea level. The cool sea breezes of the climate give the wine a maritime feel that distinguishes it from other Sauvignons. The harvest is made in the first week of August, early in the morning to maintain the freshness of the grapes. The must is allowed to cold macerate for 4–6 hours at 5–8°C to extract aromas without bitterness. Fermentation takes 15–20 days at 16–18°C in stainless steel tanks. Then the wine is aged in steel tanks for about 3–4 months, followed by at least 4 months of bottle aging.
