Tenuta Olim Bauda – Moscato d’Asti – “Centive” is a sweet, aromatic sparkling wine made from 100% Moscato grapes. “Centive” is the name of the vineyard where the grapes grow in Fontanile. The harvest takes place the second week of September and the newly pressed grapes are left with the peel a few hours before being separated from the juice. The fermentation then takes place in steel tanks. The wine is bottled in November, two months after the harvest and the sales starts at the end of the same month. Like many of the sparkling wines from Piedmont, Moscato d’Asti has a low alcohol content and is perfect at the end a dinner along with the dessert.
