“Grotte Rosse” means “Red Caves” and is made from Leonardo’s own cloned Sangiovese variety called “Salustri”. The wine is made from grapes from vines that are more than 50 years old. After the harvest at the end of September, the grapes are allowed to ferment directly in oak barrels for 20 days at a temperature of 30°C. The finished wine is aged for 2 years in oak barrels and then another 1 year in the bottle before the wine is sold.
