Collet de Bovis is an organic red wine from the exclusive micro appellationen Bellet on the hills around the city of Nice. The wine is powerful with hints of red fruit – a perfect balance and with soft tannins. To be drunk to a lamb steak with a gratin dauphinois.

Presentation vineyard

Domaine du Fogolar is the most southerly vineyard of the Bellet appellation with very favorable exposure to the sun. It is Jean Spizzo, a professor of Italian at the University of Nice who created the vineyard in the early 70s. When Jean was sent from Alsace to the faculty in Nice, he actually bought his house in Bellet. He then planted the first vines in 1974 and with true passion for winegrowing, the winery has evolved into what it is today. 4.2 hectares of vines have been planted for the production of wine of all three colors, which are regularly rewarded by the French press and French wine guides.

Sommelier's advice

An intense ruby red color. Aromas of red berries, wild roses, spices and pepper. Some balsamic hints of pine. A fruity palate with perfect balance. Tannins which are already rounded for the 2012. Power and finesse at the same time. A wine that can be drunk now or could be stored a couple of years to further compexify the aromas. To serve with lamb chops with a Provencal vegetable tian.

Collet de Bovis is produced by the typical Bellet grape variety “La Folle Noire”, Braquet, Cinsault and Grenache. The harvest is made by hand around the 20th of September, the Grenache and Braquet a week before the Cinsault and the Folle. The fermentation then takes place directly in oak barrels for 3 weeks. The finished wine then matures in oak barrels for another 18 months before being bottled.
