Du Nemo – Rossese di Dolceacqua – Red

A Rossese with notes of raspberry and wild strawberry, with some elegant spicy notes. The palate is dry and mineral.

Du Nemo – Rossese di Dolceacqua – Red wine made from 100% Rossese grapes. The grapes come from the Arcagna and Tramontina vineyards in the municipality of Dolceacqua with east/southeast exposure at an altitude between 400 and 500 m above sea level. The soil consists of an alternation of marl and sandy sediments. The grapes are harvested by hand at optimal maturity and transported to the wine cellar where they are de-stemmed and gently pressed. The must ferments at a controlled temperature (28°C) in stainless steel tanks, after a short pre-fermentation maceration. During the maceration (4-6 days), the must is carefully monitored both analytically and sensorially, and overpumping (delestage) is performed to optimize the extraction process. Malolactic fermentation and subsequent aging also takes place in stainless steel. At the beginning of summer, the year after the harvest, the wine is ready to be bottled.
