Cantine San Marzano – Edda – White wine is made from approximately 60% Chardonnay, 20 % Moscatello Selvatico and 20% Fiano. Edda means “she” in the Salento dialect and the wine is intended to represent the feminine, sensual and complex side of San Marzano. The grapes aregrown in Salento, on calcareous-clay soils about 100m above sea level. The harvest is done in August, then a cryomaceration (cold maceration) and a gentle pressing and cold clarification of the must are carried out. Alcoholic fermentation is done in French oak barrels (barriques), followed by 4 months of aging on the lees with regular stirring (bâtonnage). Edda Bianco is a rich and aromatic white wine that combines Chardonnay with authentic local grapes. Thanks to oak and lees aging, it gets both fullness, complexity and depth, while maintaining some acidity and minerality. A sophisticated choice for Mediterranean-inspired dishes – from fish and seafood to creamy cheeses.
