Francesca Fiasco – Lapazio – White wine produced in the Paestum area of ​​Cilento in Campania. It is an artisanal, biodynamic white wine that reflects the region’s terroirs and growing traditions. The wine is made from 40% Fiano, 40% Falanghina and 10-20% Coda di Volpe, sometimes supplemented with other local grapes. The grapes are grown in clay and silt-rich soil 450m above sea level. The harvest is done manually with selection and usually begins in early October. Fermentation is done in French tonneaux (oak barrels), with an emphasis on both new and used barrels (~30% new, 70% second use) for about 10 months. The wine is then aged for another ~4 months in bottle before release.
