The white “Exception” is produced from Chardonnay grapes from the vineyard’s old vines. The grapesare let to become slightly overripe before harvesting. The grapes are macerated after harvest for a few hours before pressing. The grape juice is then directly put into oak barrels where the fermentation begins. The finished wine is aged another year in oak barrels and is then blended with 30% Chardonnay White Wine that has been raised in steel tanks.
