Château Grand Ormeau – Elégance – Lalande de Pomerol – Red wine is made from 70% Merlot, 15% Cabernet Franc and 15% Cabernet Sauvignon. The grapes grow in a selection of terroirs characterized by surface gravel over a clay subsoil. The vines are over 20 years old. The harvest is done by hand, followed by a rigorous thinning. The grapes are fermented in temperature-controlled stainless steel and wooden barrels, with an average maceration period of 3 weeks. Some of the wines undergo malolactic fermentation in barrels. The rest are aged in tanks until bottling. The wine is aged for 13 to 16 months in barrels, depending on the vintage. The aging takes place in French oak barrels, with 30% new barrels renewed each year. A light filtration is carried out before bottling.
