Gibelè from Cantine Pellegrino is a dry white wine from Sicily, made from 100% Zibibbo grapes. The name “Gibelè” refers to the traditional Sicilian building “dammuso”, which reflects the origin and character of the wine. The grapes are grown in Agro di Petrosino and Mazara del Vallo in the province of Trapani in the western part of the island. The soil is volcanic and clayey and the vineyards are located at 0-400 meters above sea level, with a Mediterranean climate characterized by hot, dry summers and mild winters. The grapes are harvested in September and partially macerated. They are then gently pressed and left to ferment at a controlled temperature. The wine is aged in steel tanks for 4 months followed by bottle ageing.
