St. Michael Eppan – Pinot Grigio – White wine is made from 100% Pinot Grigio grown in the municipalities of Appiano and Caldaro, around 400-500 meters above sea level in the southeast and southwest direction. The soil is calcareous and stony. The harvest is made in mid to late September, with harvesting and selection of grapes by hand. The wine is allowed to ferment and then partially the malolactic fermentation is carried out in stainless steel tanks.
