Domaine Derey – Marsannay – White wine made from Chardonnay grapes. from 40-year-old vines growing in clay and limestone soil with a stony to sandy texture. Its exposure to the mid-slope produces grapes that regularly reach fine ripeness. The grapes are transported to the vat room after harvest. They are pressed to extract the best Chardonnay must with a good balance between sugar and acidity. The must is cooled to ensure a long fermentation followed by barrel aging for 12 months, 20% of which in new barrels.
