Pinot noir from Moulin de Gassac is a light and juicy red wine with aromatic notes of cherry and an ounce of moka. Nice freshness and soft tannins – to pair with cured meat or or with a spaghetti with ceps.

Pinot noir from Moulin de Gassac is made from Pinot Noir grapes grown around Cournonterral in the Languedoc region. After harvest, the grapes are separated from their clusters (éraflage). The wine is fermented according to traditional method with daily stirring (remontage) for 5 days at low temperatures to preserve the fruit. The wine is stored for 6 months on steel tank before being bottled.
