Domaine Rouge Garance – Garances – Red wine is made from 70% Carignan and 30% Grenache grown over 1.5 hectares of land. Farming is carried out biologically and no herbicides are used. Harvesting is done entirely manually. The grapes are picked from their bunches and allowed to ferment for 15 days at 16-24°C, after first having cold macerated for 48 hours. The aging is done completely without sulfites for 10 months in concrete tanks.
