Cadireta from Domaine Lafage is a dry white wine made from 95% Chardonnay and 5% Viognier. The grapes are cleaned when they are picked. The grapes are gently pressed to avoid bitter notes. The must is cooled and allowed to clear naturally, which gives cleaner aromas and a softer structure. The main part ferments in temperature-controlled steel tanks. A smaller part ferments or is aged in oak barrels. Then it is aged on the lees for a couple of months. 70% of the wine is aged in steel tanks and 30% in new oak barrels.
