Domaine Lafage – Autentique is a full-bodied red wine made from 50% Carignan, 40% Syrah and 10% Grenache. The grapes are grown on vineyards with varying soils — pebble-filled maritime soils, clayey slopes near the Pyrenees and schist soils in the Agly Valley — which gives a complex terroir palette. The harvest is done manually and the grapes are sorted upon arrival at the vineyard before they proceed to pressing and fermentation. The wine is made according to classic methods. Before fermentation starts, a cold pre-maceration is done to extract aromas and color from the skins. The grape must is allowed to ferment with the skins for approximately 21 days. 20% of the wine is aged in French oak barrels (typically 1 year old) to gain structure, complexity and a little wood character. 80% of the wine is aged in steel or concrete tanks, where regular bâtonnage (stirring of the lees) is performed to give it a round and integrated body.
