The white “Cuvée Clarendon” is perhaps the most well-known wine from Domaine Gavoty. Robert Parker has since long considered the Clarendon to be one of the best white wines from Provence. A delicious wine made from 100% Rolle grapes (Vermentino), to pair with seafood or with chicken dishes.

Presentation vineyard

Domaine Gavoty is located not far from the village of Cabasse in the middle of the countryside and right in the middle of the great rosé district "Haut-Var." The vineyard was one of the first in Cabasse and it's actually one of the older wineries in the whole of Provence. The estate has always belonged to the Gavoty family, who founded the winery already in 1806. Today it's Roselyne who represents the 8th generation of wine growers and she controls both the viticulture and the winemaking. The particularity of the wines from Domaine Gavoty, is that the grapes are macerated after the harvest to create fruity wines with powerful aromas. Oak barrels are banned here and the wines are created exclusively with the aromas from the fuit juice. The wines of Gavoty are regularly commented in French wine guides and are served in the better restaurants in both Paris and in the provinces.

Sommelier's advice

A bright yellow color with green hues. Fruity aromas of ripe fruit (pear and pineapple). Floral elements and a slight scent of honey. A lively flavor that will be soothed with some years of storage, a structure that will be balanced. A true storage wine which can make at least 10 years in the cellar. Goes already today well with fish dishes on the grill. Over the years, it also fits well with a seafood stew, and then to creamy dishes like chicken in a creamy sauce.

Domaine Gavoty – Cuvée Clarendon – White wine is made of 100% role grapes (Vermentino) which are pressed immediately after the harvest. The grape juice ferments for 4 weeks at 16 ° C. The finished wine is bottled in March.
