Domaine des garriguettes – Fleur de lune – Côtes-du-Rhône – Red wine is made from 70% Cinsault and 30% Grenache. The farming is organic with Demeter certification. The grapes are cold macerated immediately after harvest for about 12 days. The grapes are “tapped” on the first must 10% (saignée). About 90% of the grapes are destemmed while 10% ferment with whole bunches. The wine is made completely naturally without any additives. After fermentation, the wine is left to rest on its lees. The aging takes place 90% in concrete tanks and 10% in demi-muids (larger oak barrels) for about five months.
