Bel Canto is made of the local grape varieties loin de l’oeil and Mauzac, as well as of Sauvignon grapes. Each grape variety is picked separately and processed separately from each other. The grapes are pressed after harvest and the grape juice may be macerated for a while before it is transferred to oak barrels where the fermentation takes place for 10 days. The finished wine is then stored an additional 10 months in oak barrels before being bottled.
