Camille Cayran - La Réserve - Cairanne - White
La Réserve from Camille Cayran is made from 65% Grenache blanc, 20% Clairette, 15% Roussane as well as from Marsanne and Bourboulenc. The grapes are harvested by hand early in the morning and are culled directly by the harvester. The grapes are then pressed directly to preserve as much as possible of flavors, fruit and finesse. The juice is then coolclarified at 4-6 ° C (débourbage). The fermentation is done at low temperature (16-18 ° C) to thus develop secondary aromas. The wine is stored on its lees which adds roundness and volume to the final wine.

Presentation of the vineyard
Camille Cayran is a wine cooperative in Cairanne representing 80 small winegrowers since more than 80 years. The wines produced, include several of the major appellations in southern Côtes-du-Rhône, such as Châteauneuf-du-Pape, Gigondas, Vacqueyras and Cairanne. Tradition is an important concept and the goal is as most as possible to respect the fundamental values, which means as a wine grower to act like a "gardener of his treasure" Most of the production is organic.
A very pale yellow color with silvery shades. The fragrance is aromatic with hints of white flowers, acacia and linden but also develops aromas of pear and apricot after a few minutes of aeration. The palate is round and generous, but with a fresh and crisp acidity. Good length. To serve as an aperitif, to pair with assorted tapas, chicken dishes or a grilled fish.
