Château Maucaillou - Moulis - Red

The vinification is done in two modern cellars with access to the latest technology. The fermentation is done in temperature-controlled stainless steel tanks to apply the special method that Philippe Dourthe developed in 1982. It means that you macerate the first few days with a relatively low temperature to extract the fruit aromas of the grapes. At the end of the fermentation you let the temperature rise to extract the finest tannins and a beautiful color. The malolactic fermentation follows. The wine is then stored for 18-20 months on oak barrels, of which 50-75% are new depending on the vintage. The wine is cleared with egg white.

Presentation of the vineyard

"Maucaillou" means "bad stone" and refers to the rocky soil that was useless for cereal cultivation during the Middle Ages, but to the better for the latter wine cultivation. In 1871, the  wine merchant family Petit-LaRoche, built their wine cellars and warehouses in Moulis, in the middle of the geographical part of Haut-Médoc. The magnificent main building was built in stone over 3000 square meters. Everything to optimize the wine production which for that time would represent the enormous 180,000 liters, 9,000 barrels and 300,000 bottles. In 1875, J. Petit-Laroche married and built a beautiful mansion for his wife as a wedding gift. The building was erected in front of his wine cellar in Médoc and this building is the current wine castle. In 1929, the wine merchant family Dourthe buys the property.

Sommelier's advice

A beautiful ruby ??red color. The nose is highly aromatic, subtle and pleasantly fruity. Mainly elements of mature, concentrated berries. The palate is harmonious and balanced, rich and generous, all with finesse and elegance. The wine has a long finish with soft but well-present tannins. To pair with a pork fillet with forest mushrooms.
