{"id":68428,"date":"2015-04-23T12:08:12","date_gmt":"2015-04-23T12:08:12","guid":{"rendered":"https:\/\/henrik.www.ivinio.com\/?p=68428"},"modified":"2020-07-09T16:24:25","modified_gmt":"2020-07-09T16:24:25","slug":"lhistoire-du-champagne-de-la-baltique-continue","status":"publish","type":"post","link":"https:\/\/www.ivinio.com\/fr\/lhistoire-du-champagne-de-la-baltique-continue\/","title":{"rendered":"L&#8217;histoire du &#8220;champagne de la Baltique&#8221; continue"},"content":{"rendered":"<p>Aucun passionn&eacute; de vin n&#39;a pu &eacute;viter de lire l&#39;article &agrave; propos du&nbsp;&laquo;champagne de la Baltique&raquo; trouv&eacute; dans un naufrage au large des &icirc;les &Aring;land en 2010. Pas moins de 168 bouteilles, dont un&nbsp;grand nombre de bouteilles sont&nbsp;encore buvables, gisaient&nbsp;depuis le d&eacute;but du XIX&egrave;me si&egrave;cle &agrave; 55 m&egrave;tres de profondeur. Le champagne a &eacute;t&eacute; retrouv&eacute; bien conserv&eacute; sur le fond marin, prot&eacute;g&eacute; de la lumi&egrave;re, &agrave; 6 bars de pression (la&nbsp;m&ecirc;me pression que dans la bouteille) et &agrave; la temp&eacute;rature constante de l&#39;eau 4-6&deg;C&nbsp;&nbsp;depuis&nbsp;170 ans. Le <a href=\"http:\/\/www.ivinio.com\/fr\/s\/search?q=champagne\">champagne<\/a> provenait principalement de la maison de champagne Juglar (aujourd&#39;hui disparu et rachet&eacute;&nbsp;par Jacquesson en 1832), mais aussi de la Veuve Cliquot et Heidsieck. Avec l&#39;aide d&#39;experts, il a &eacute;t&eacute; confirm&eacute; que les bouteilles Veuve Cliquot sont compl&egrave;tement originales et ont&nbsp;probablement produites et vendues par feu madame Cliquot. Une d&eacute;couverte historique. Les premi&egrave;res bouteilles sont all&eacute;es dans les ventes aux anch&egrave;res &agrave; Mariehamn en Juin 2011. Une bouteille de Veuve Cliquot et une de Juglar ont&nbsp;&eacute;t&eacute; vendues&nbsp;30 000 &euro;&nbsp;et&nbsp;24 000&euro;. C&#39;est&nbsp;plus vieux champagne du monde jamais vendu !<\/p>\n<p>Depuis sa d&eacute;couverte en 2010,&nbsp;de nouvelles d&eacute;couvertes ont mises en lumi&egrave;re par le PNAS (Proceedings of the National Academy of Sciences des &Eacute;tats-Unis).&nbsp;Le 20 avril de cette m&ecirc;me ann&eacute;e, Philippe Jeandet, professeur de biochimie &agrave; l&#39;Universit&eacute; de Reims et le professeur Philippe Schmitt-Kopplin de l&#39;Universit&eacute; de Munich ont&nbsp;publi&eacute; de nombreux articles int&eacute;ressants &agrave; propos de ces d&eacute;couvertes de vins. Philippe Jeandet a pris des&nbsp;&eacute;chantillons de 100 microlitres, soit 2 gouttes dans&nbsp;une pipette. Il&nbsp;d&eacute;crit le vin comme tr&egrave;s spectaculaire, parfaitement conserv&eacute; et avec des notes aromatiques de tabac et de cuir. D&#39;autres professionnels en &oelig;nologie&nbsp;ont eu l&#39;occasion de go&ucirc;ter &agrave; ce&nbsp;vin et l&#39;ont&nbsp;d&eacute;crit &laquo;jeune&raquo; au go&ucirc;t frais, des d&#39;&eacute;l&eacute;ments floraux et fruit&eacute;s.<\/p>\n<p>Une surprise cependant; sa teneur en sucre&nbsp;&eacute;tait significativement plus &eacute;lev&eacute;e que celui du&nbsp;<a href=\"http:\/\/www.ivinio.com\/fr\/s\/search?q=champagne\">Champagne<\/a> d&#39;aujourd&#39;hui. Pas moins de 150 grammes de sucre par litre ont &eacute;t&eacute; mesur&eacute;s soit&nbsp;trois fois plus de sucre que dans du&nbsp;Coca-Cola. L&#39;explication est que c&#39;&eacute;tait la r&eacute;f&eacute;rence de la saveur contemporaine en France et en Allemagne. Pour la noblesse russe, la teneur&nbsp;de sucre &eacute;tait&nbsp;m&ecirc;me le double, 300 grammes par litre, ce qui confirme que ce vin n&#39;avait pas la Russie comme destination finale. Le champagne moins sucr&eacute;&nbsp;a fait ses d&eacute;buts&nbsp;vers 1850 pour le go&ucirc;t am&eacute;ricain et anglais qui&nbsp;pr&eacute;f&eacute;raient&nbsp;moins de sucre dans le vin.<\/p>\n<p>L&#39;analyse chimique a &eacute;galement &eacute;t&eacute; en mesure de confirmer plusieurs choses int&eacute;ressantes:<br \/>\nLe premier constat est que le taux d&#39;alcool atteint seulement 9,5%&nbsp;contre 12,5% aujourd&#39;hui. La raison en est sans doute que le climat &eacute;tait plus froid &agrave; cette &eacute;poque et la teneur en sucre naturelle des raisins &eacute;taient donc moindre&nbsp;ce qui donnait&nbsp;un vin plus faible en alcool.<\/p>\n<p>La composition chimique est tr&egrave;s semblable &agrave; celle que nous trouvons dans les champagnes d&#39;aujourd&#39;hui. Cela signifie probablement que dans le d&eacute;but des ann&eacute;es 1800 la technique de vinification est ma&icirc;tris&eacute;e et que la technologie elle-m&ecirc;me n&#39;a pas beaucoup chang&eacute; depuis.<br \/>\nIl a &eacute;t&eacute; retrouv&eacute; une grande quantit&eacute; de traces de bois&nbsp;car la&nbsp;vinification de l&#39;&eacute;poque se faisait&nbsp;en f&ucirc;ts de ch&ecirc;ne.<br \/>\nLa pr&eacute;sence de fer a aussi &eacute;tait d&eacute;tect&eacute;e en raison des r&eacute;cipients de fer utilis&eacute;s pour transporter le jus de raisin et une pr&eacute;sence de cuivre qui s&#39;explique par l&#39;utilisation de soufre pour lutter contre les infections fongiques de la vigne.<\/p>\n<p>En r&eacute;sum&eacute;, d&#39;un point de vue sanitaire, ces vieux mill&eacute;simes de 170 ans sont parfaitement aptes &agrave; &ecirc;tre consomm&eacute;s et les chanceux qui ont pu les d&eacute;guster ont certainement v&eacute;cu une exp&eacute;rience inoubliable &#8230; !!!<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>En 2010, du&nbsp;champagne dat&eacute; d&#39;il y a 170 ans a&nbsp;&eacute;tait d&eacute;couvert dans les fonds marins au large des &icirc;les d&#39;&Aring;land.
