The name &#8220;Il Salinaro&#8221; refers to the salt workers (salinari) who work in the salt fields near the coast of Marsala, where Pellegrino is based. These salt pans also affect the microclimate and soil of the area, giving the wine a distinct maritime character. The wine is grown in <span style=\"font-size: 1rem;\">Marsala in the western part of Sicily. The grapes are harvested in <\/span><span style=\"font-size: 1rem;\">late August, early September. <\/span><span style=\"font-size: 1rem;\">The grapes are destemmed and gently pressed to extract the must without getting bitter substances from the skins or seeds. <\/span><span style=\"font-size: 1rem;\">The must is then cooled down (often to 5\u201310 \u00b0C) and left to stand so that cloudy particles sink to the bottom. <\/span><span style=\"font-size: 1rem;\">The clarified &#8220;clean&#8221; must is then bottled. <\/span>Temperature-controlled fermentation <span style=\"font-size: 1rem;\">at low temperature (12\u201316 \u00b0C)<\/span> in stainless steel tanks<span style=\"font-size: 1rem;\">. <\/span><span style=\"font-size: 1rem;\">The wine is aged briefly in steel tanks with its yeast sediment (<\/span>sur lie), <span style=\"font-size: 1rem;\">which can give a little extra texture and complexity.<\/span> <span style=\"font-size: 1rem;\">After a short aging, the wine is filtered and bottled.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Dry and fresh white wine with a good balance between acidity and fruit.
