Domaine des Marrans – Fleurie – Red wine is grown over 4 ha of land with vines aged 45 years. Moderate volumes of 30 hl\/ha are extracted. The vineyard is exposed to the south at a height of 300 meters above sea level. The harvest is done manually and the grapes are thinned directly at harvest and then further in the cellar on a vibrating table. The must is easily cleared (removal of solid vegetable substances – “d\u00e9bourbage”). Fermentation is carried out for 11-13 days with whole bunches, natural yeast and “semi-carbonated technology” (mac\u00e9ration semi-carbonique). The temperature is regulated to be kept below 28 \u00b0C. One stirring (remontage) per day. The malolactic fermentation is then carried out.
