Ollieux Romanis – Cuvée Classique – Corbières – red wine is made from 40% Carignan, 30% Grenache and and 30% Syrah. The vines grow in a red, rocky soil on sandstone – a typical soil around the Mediterranean sea. The harvest is done by hand. The carignan grapes may partially undergo a carbon dioxide maceration, while the Grenache and Syrah grapes are separated from their clusters. The fermentation lasts for 15 days on steel tank at controlled temperature.
