i Soli Vermentino from Foresti is an aromatic dry white wine, made of 100% Vermentino. The grapes are grown by several winemakers along the stretch from Ventimiglia\u00a0to Cervo. The grapes are macerated with\u00a0the\u00a0skin in room temperature directly after the harvest for 12 hours. They are then fermented at 18 \u00b0 C with yeast extracted\u00a0the\u00a0winery’s own grapes. This is followed by the malolactic fermentation, the clarification and then the stabilization.
