All vines are over 50 years old. The grapes are pressed immediately after the harvest and the must is clarified\u00a0for a day&#8217;s time at 8 \u00b0 C (debourbage). The beginning of the fermentation takes place in steel tanks at\u00a016-18 \u00b0 and finishes in oak barrels.
