This is true in France, but also internationally since not less than\u00a065% of the Chablis production goes to export. And of course, the mineral\u00a0Chardonnay\u00a0wine from Chablis is outstanding for those who like dry, tight and crispy white wines with high acidity.<\/p>\n<p>Chablis is actually a town\u00a0&#8211; or rather a village\u00a0with it&#8217;s just about 2,400 inhabitants &#8211; located in the northern part of Burgundy. The vineyard stretches about 10 km\u00a0in each direction around the city and includes\u00a020 different municipalities. Unlike the prestige appellations in C\u00f4tes de Nuits and C\u00f4tes de Beaune, Chablis has on its own created its reputation as being one of the top white wines of Burgundy. The neighbouring\u00a0appellations such as Irancy, Saint-Bris and V\u00e9zelay are much less known and the entire northern part of the Burgundian vineyards &#8220;Le Chablisien-Axerrois&#8221; is\u00a0 significantly less mentioned\u00a0than the corresponding C\u00f4tes-de-Nuits or C\u00f4tes de Beaune further south. Le Chablisien-Axerrois is also not geographically linked with the other Burgundian vineyards that extend from the town\u00a0of Dijon towards\u00a0the south. Le chablisien-Auxerrois actually stands out like an &#8220;island&#8221; quite exactly between the French capital of Paris and C\u00f4tes-de-Beaune&#8217;s &#8220;capital&#8221; Beaune.<\/p>\n<p>&#8220;No smoke without fire&#8221; as the French say, and the Chablis unique character that created the demand of wine and reputation builds in many ways on the unique soil; the vineyard was covered by sea\u00a0150 million years ago and the seabed of the past has created today&#8217;s calcareous soil, rich in oyster fossils and called\u00a0Kimmeridgien.<\/p>\n<p>The Romans were those who introduced the wine\u00a0in Chablis, sometime during the first three centuries a. Kr. But it&#8217;s\u00a0the Cistercian monks in the abbaye of\u00a0Pontigny, who have\u00a0been\u00a0considered to be\u00a0the\u00a0boost behind\u00a0the cultivation in\u00a0\u00a0the 1100s and who got the wine introduced\u00a0on the table of\u00a0the French court !\u00a0This in turn has contributed to an increase of\u00a0interest in Chablis\u00a0abroad and in the increase of\u00a0exports.<\/p>\n<p style=\"text-align: justify;\"><img decoding=\"async\" style=\"--smush-placeholder-width: 1632px; --smush-placeholder-aspect-ratio: 1632\/1102;height: 527px; width: 780px;\" data-src=\"https:\/\/www.ivinio.com\/wp-content\/uploads\/modules\/file\/pictures\/6731.IMG_3638.jpg\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" class=\"lazyload\" \/><\/p>\n<p style=\"text-align: justify;\"><em>A selection of Chablis 1er Cru from the left bank (&#8220;La rive gauche&#8221;). Beauroy 2015 by Domaine William Fevre: very vibrant\u00a0and crispy in the attack followed up by a rounder finish. However, oak which doen&#8217;st appear. &#8220;Montmains&#8221; from Domaine Long-Depaquit: a candy bag!\u00a0Elegance and style, perfectly oaked without vulgarity. A favorite among the big ones. C\u00f4te de L\u00e9chet 2013 from Vincent Dampt. Five year storage. Nice balance between candied fruits and acidity\u00a0and a round\u00a0style in front of fresh minerality. Our favorite.<\/em><\/p>\n<p style=\"text-align: justify;\">Chablis is produced only as white wine and only from\u00a0Chardonnay. This\u00a0makes the\u00a0wine\u00a0quite easy to understand. On the other hand, there are 4 different categories of Chablis wines, where &#8220;Petit Chablis&#8221; (little Chablis) is the most accessible\u00a0variant. Then, there are\u00a0the\u00a0regular Chablis, Chablis 1er Cru and Chablis Grand Cru. Chablis 1er Cru are wines made\u00a0from grapes cultivated in better exposed soils around the city of Chablis. All Grand Cru are\u00a0located on the right bank of the river, while the Premier Cru wines are scattered on both sides.<\/p>\n<p style=\"text-align: justify;\"><img decoding=\"async\" style=\"--smush-placeholder-width: 827px; --smush-placeholder-aspect-ratio: 827\/591;height: 557px; width: 780px;\" data-src=\"https:\/\/www.ivinio.com\/wp-content\/uploads\/modules\/file\/pictures\/6732.IMG_3635.jpg\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" class=\"lazyload\" \/><\/p>\n<p style=\"text-align: justify;\"><em>&#8220;Mont\u00e9e de Tonnerre&#8221; 2016 from La Chablisienne: correct, but nothing to comment, &#8220;Mont\u00e9e de Tonnerre&#8221; 2016 from Charl\u00e8ne &amp; Laurent Pinson: own style with fresh\u00a0crispy citrus aromas, high acidity and well-present oak. &#8220;Vaucoupin&#8221; 2015 by Domaine Maupa: shares the\u00a01st place, fresh lemon flavors, the palate is juicy, full and round but balanced with fine acidity\u00a0and minerality. &#8220;Mont de Milieu&#8221; 2015 by Domaine Servin: mineral and\u00a0lemon shell aromas. An eager, lively palate, typical for shellfish. &#8220;Fourchaume&#8221; 2015 from Garnier &amp; fils: shares the\u00a01st place. Good allround wine: aroma of mature fruit, lively and mineral flavor with oaky\u00a0tones in perfect harmony.<\/em><\/p>\n<p style=\"text-align: justify;\">17 out of the 40 Premier Cru names are more famous and more selling than the others. These could be called &#8220;Porte-Drapeau&#8221; climates or &#8220;flagship climates&#8221;. And it will probably not be easier\u00a0for the\u00a023 lesser-known climate to emerge. It is actually allowed for\u00a0wines grown in a lesser known climate, to use the name of an adjacent, more known climate. The natural result of this is that\u00a0 the more known and more selling climate is used and that you&#8217;ll mainly find the 17 most famous Premier Cru wines in the trade, even if the wine itself has been grown elsewhere.<\/p>\n<p style=\"text-align: justify;\">To taste Chablis :<\/p>\n<p style=\"text-align: justify;\"><img decoding=\"async\" style=\"--smush-placeholder-width: 789px; --smush-placeholder-aspect-ratio: 789\/600;float: right; height: 266px; margin-left: 10px; margin-right: 10px; width: 280px;\" data-src=\"https:\/\/www.ivinio.com\/wp-content\/uploads\/modules\/file\/pictures\/6733.IMG_3639.jpg\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" class=\"lazyload\" \/>Just like for other wines, Chablis is a meeting between a vine, a terroir and a human (wine maker). In Chablis, however, the vine has less distinctive importance, since it&#8217;s always Chardonnay. The climate zones are of course of main importance, but\u00a0it&#8217;s impossible to deny the wine maker&#8217;s role with his skills and know-how being of great importance to the final quality of the wine. So big, that you can find Chablis wines that are at least as good as a Chablis 1er Cru. Furthermore, each wine-maker has its style and although the vine and the terroir are the same, there are wines with or without oak-storage. There are wines with tight mineral acidity and rounder, fruity, almost sweet varieties\u00a0that can be paired with\u00a0both stored cheeses and desserts. And not the less, the wines change character with age. Chablis wines are excellent for storage. Fresh and\u00a0crispy fruit- and citrus aromas then fade\u00a0away and some more nutty\u00a0and oxidized tones\u00a0take place. All this, allow\u00a0Chablis wines to be served for dishes that not only consist of seafood and fish.
