Côtes-du-Rhône Villages from Vidal-Fleury is made from Grenache, Syrah and Mourvèdre. The wine is grown in calcareous stone soil in the southern part of the Côtes-du-Rhône district. Fermentation takes place for each grape variety separately for 3-4 weeks. The grape juice is regularly drained from the bottom of the steel tank and then pumped back on top of the “grape juice cake” (chapeau de marc) that remains (délestage). This is followed by malolactic fermentation. The wine is aged for 10 months in large oak barrels (foudres).
