Domaine de Carteyron – Malyse – White wine is made from 100% Rolle grapes. The proximity to the sea provides the freshness required for a slow and gradual ripening of the hand-picked berries. The grapes are harvested at night by hand in the light of floodlights. The grapes arrive in the cellar and are pressed immediately. The must from the first press is clarified and allowed to ferment. The wine is then aged on its lees in stainless steel barrels.
