Giol - Pinot grigio

Pinot Grigio from Giol is made from hand-picked grapes, pressed using the most modern technologies in order to extract the clearest and purest juice. The pressed grape juice is then left  to let the lees fall to the bottom. The pure juice is transferred into a new tank, yeast is added and the cold fermentation process starts at 16 ° temperature. The wine is retransferred to new tanks and will then rest with regular stirring of the lees, so called "batonnage". The finished wine is preserved in airtight barrels and the wine is bottled several times a year depending on the demand so as to always offer a fresh wine. The wine is stabilized and bottled under sterile conditions by aseptic filtration.

Presentation of the vineyard

Giol is located in San Polo di Piave in the middle of Treviso, only 35 km from Venice and 15 km from the Proseccohills surounding Valdobbiadene and Conegliano. The vineyard is Italy's oldest documented vineyard dating back to the 1400s. Today it is Vittoria Carraro who produces wine with the intention of making natural quality wines to an affordable price. All viticulture is organic since 1986.

Sommelier's advice

A bright straw yellow color with silvery hues. Fruity aromas of peach and apricot with hints of sun-dried hay. A fresh and well-balanced flavor that confirms the scent impressions. A wine which goes best for aperitif, preferably with cold antipasti. Is also excellent for a fishdish with sauce or "au gratin".
