Rossese di Dolceacqua from Foresti is a fruity red wine made of 100% Rossese grapes. The grapes are grown in the municipalities of Camporosso, Dolceacqua, Soldano and San Biagio della Cima. The wine is produced according to the traditional method where the grapes are fermented at 30 ° C for 10 days. The malolactic fermentation follows, then the clarification. The wine is then stored for 8 months in steel tanks before being bottled and then stored another 3 months.

Presentation of the vineyard

Foresti is a family winery, originally from Camporosso. The winery has over the years acquired new land and today it includes a total surface of 15 hectares of land. Recent investments into new and modern winemaking equipment has been done. Today, the Foresti winery grow 3 different, very typical Ligurian vine varieties - Rossese, Vermentino and Pigato for the production of 5 different DOC wines.

Rossese di Dolceacqua from Foresti has a clear ruby red color. The nose is very aromatic with floral hints of violets and roses. The taste is dry and fruity with pleasant hints of almond. To be enjoyed young within the next 3 years together with a pasta with pesto, varied cold cuts and assorted Italian antipasti.
