Foresti - i Soli - Pigato - white

i Soli Pigato from Foresti is a dry but soft white wine made from 100% Pigato grapes. This wine originates from the southern part of the Valle d'Arroscia, just north of the seaside towns of Imperia and Savona. The grapes for i Soli grow in the municipalities Camporosso, Bordighera, Cipressa, Diano San Pietro and Ranzo. The grapes are macerated with the skin for 12 hours after the harvest and are then fermented at 18 ° C with yeast extracted from the winery's own grapes. The malolactic fermentation follows, then the clarification and finally the stabilization. The wine is stored for 5 months in steel tanks, of which 3 months on the lees.

Presentation of the vineyard

Foresti is a family winery originally from Camporosso. The family has continouisly acquired new lands over the years and the completely vine covered property today includes 15 hectares of land. Investments have been made in new and modern winemaking equipment. Today, they winery grow the 3 different and very typical Ligurian grape varieties which are Rossese, Vermentino and Pigato for the production of 5 different DOC wines.

Sommelier's advice

i Soli Pigato from Foresti has a light yellow color with light green hues. The nose is aromatic and complex with hints of ripe peach, honey, white flowers, sage and musk. The taste is dry but soft, fine aromatic length and a finale that ends with a pleasant bitter tone. To be drunk as an aperitif, together with a pasta with pesto, or to varied mushroom dishes and assorted Italian antipasti.
