Domaine Canto Perlic - Monalisa
"Mona Lisa" is produced with the local southwestern grape varieties "Loin de l'oeil" and Mauzac, 50% of each variety. The grapes are picked by hand only in the month of November after that the grapes have been infected with the noble rot "Botrytis cinerea". The grape bunches dry and crumpled at the harvest in November. The grapes are of very high concentration of sugar and flavorings, which is a prerequisite to produce a complex and aromatic dessert wine. After harvesting, the grapes are pressed and left to macerate for a week's time. The fermentation process takes a month and the wine is then stored in steel tanks for another 5 months before bottleling.

Presentation of the vineyard
Domaine Canto Perlic belongs to the appelation Gaillac in the Southwest of France. The name "Canto Perlic" means the partridge's song in the ancient southern French language called occitane. The vineyard was bought in 2000 by Sune and Ursula Sloge with origins in Sweden. The vineyard has been completely renovated and modernized since the purchase and today Canto Perlic can enjoy the reputation for being one of the best vineyards of the Gaillac appellation. The estate comprises 9 hectars of land and as often in southwest many diverse grapes varieties are cultivated here. For the red wines, representing 70% of the total production, is grown fer Servadou, syrah, duras, merlot, cabernet sauvignon and gamay. Mauzac, loin de l'oeil, Sauvignon and Muscadelle are cultivated for the white wines.
Intense yellow color with golden tints. Aromas of honey and melon. A full-bodied, soft and fruity taste, with strong hints of natural fresh white grapes. A very good dessert wine with dosed sweetness which allows the wine's natural aromas and fruit flavors to express themselves. Perfect for aperitif, a blue cheese or a fruit dessert, preferably with strawberries as the main ingredient.
