Domaine Sainte Eulalie - L'Estourbille - Red
L'Estourbille from Domaine Sainte Eulalie is made of 70% syrah and 30% cinsault. The fermentation lasts for 15 days and the "wine hat" on the top of the tank is regularly mixed (pigeage). The wine is also pumped up from the bottom (remontage). The wine is stored on steel tanks before being bottled.

Presentation of the vineyard
Domaine Sainte Eulalie is located just north of Hyères on the French riviera, at the foot of the Maures mountain massif. The vineyard, which was initially planned to become a golf course, was taken over by Jean-Louis de David-Beauregard after finishing his wine studies in Hyères. Jean-Louis planted 11.5 hectares only in 2000 and then another 5.5 hectares in 2002 to increase the production to 17 hectares under the Côtes-de-Provence appellation. The winery cultivates the for Provence very typical Syrah, Grenache and Mourvedre varieties. The agriculture is organically conducted with ambition to intervene as little as possible to the natural process. Only natural yeast is used and the wine tanks are small to easily process the various grape varieties as well as the mixture of the final wine. 60% of the production is red wine and the rest is rosé.
A pomegranate color with violet hues. The nose is fruity and delightful, lightly mineral but dominated by black berries (blackberries and black currants). The palate is soft, smooth and medium-bodied, but with a good concentration. A high quality red wine for those who like southern European wines, but prefer elegance in front of power. To serve to most meals from red meat dishes to a lighter chicken salad.
