Domaine Gavoty - La Cigale - Rosé
"La Cigale" from Domaine Gavoty is made of Grenache- and Cinsault grapes. The grapes macerate immediately after the harvest in order to create the wine's fruity aromas. The fermentation then lasts for 12 days at 17 ° C. The finalized wine is bottled in March the year following the harvest.

Presentation of the vineyard
Domaine Gavoty is located not far from the village of Cabasse in the middle of the countryside and right in the middle of the great rosé district "Haut-Var." The vineyard was one of the first in Cabasse and it's actually one of the older wineries in the whole of Provence. The estate has always belonged to the Gavoty family, already since 1806. Today it's Roselyne who represents the 8th generation of winegrowers and she controls both the viticulture and the winemaking. The particularity of the wines from Domaine Gavoty, is that the grapes are macerated after the harvest to create fruity wines with powerful aromas. Oak barrels are banned here and the wines are created exclusively with the aromas from its own juice. The wines of Gavoty are regularly commented in French wine guides and are served in the better restaurants in both Paris and in the provinces.
A bright salmon pink color with silvery hues. Fruity aromas of red berries. A sweet fruity flavor with good balance between fruit and acidity. A well-made rosé wine suitable for aperitif, all types of Mediterranean food, preferably a pasta with pesto.
