Domaine Gavoty - Grand classique 2018 - Rosé
The Rosé wine "Tradition" is produced from Cinsault, Carignan, Syrah and the white grape variety called Rolle. The grapes are macerated for 3-6 hours after the harvest and then squeezed. The colored juice is extracted from the macerated grapes (saignée) and is then mixed with the brighter grape juice from the first press. The wine is fermented for 15 days at 17 ° C. The wine from the different wine varieties is then filtered, before they are all mixed together into the finalized wine. The wine is aged in steel tanks and bottled when needed throughout the year.

Presentation of the vineyard
Domaine Gavoty is located not far from the village of Cabasse in the middle of the countryside and right in the middle of the great rosé district "Haut-Var." The vineyard was one of the first in Cabasse and it's actually one of the older wineries in the whole of Provence. The estate has always belonged to the Gavoty family, who founded the winery already in 1806. Today it's Roselyne who represents the 8th generation of wine growers and she controls both the viticulture and the winemaking. The particularity of the wines from Domaine Gavoty, is that the grapes are macerated after the harvest to create fruity wines with powerful aromas. Oak barrels are banned here and the wines are created exclusively with the aromas from the fuit juice. The wines of Gavoty are regularly commented in French wine guides and are served in the better restaurants in both Paris and in the provinces.
Bright salmon pink color with silvery hues. Aromas of strawberries. A fresh and very fruity, well balanced taste of strawberries as well. Good volume and a fruity finale. A rosé which goes well with "foody" salads, with spicy Asian cuisine or with typical Mediterranean cuisine ..
