The white "Exception" is produced from Chardonnay grapes from the vineyard's old vines. The grapesare let to become slightly overripe before harvesting. The grapes are macerated after harvest for a few hours before pressing. The grape juice is then directly put into oak barrels where the fermentation begins. The finished wine is aged another year in oak barrels and is then blended with 30% Chardonnay White Wine that has been raised in steel tanks.

Presentation of the vineyard

Domaine des Masques is located a few kilometers from Aix-en-Provence in a unique natural environment, 550 meters above the sea level, at the foot of the Sainte Victoire mountain. It was here, that Paul Cezanne, in his time, painted many of his most famous paintings. Before 1993 there were only scrubland here and in just 20 years, the domain has evolved into what it is today. The philosophy of the winemaking is to mix tradition with innovation in a unique manner. The objective is to make wines with personality and of excellent quality. The wine production is conducted in collaboration with Yves Cuilleron, also known from the Rhône Valley and his Condrieu, Cornas and Côte-Rôtie wines. No chemical pesticides are used in the agriculture and the working methods and tools are of the latest technology.

Sommelier's advice

Clear golden color with golden hues. Intense and complex aromas of peach, citrus fruit and some hints of hawthorn. The wine is soft, generous and well-structured with a great finesse. Goes well with fish dishes with creamy sauces, chicken dishes or exotic and Mediterranean dishes. To be served chilled at 10-11 °.
