Domaine des hautes Collines de la Côte d'Azur, Cuvée du Pressoir Romain 2016 - Red
Cuvée du Pressoir Romain is made of not less than 5 different grape varieties; Mourvèdre, Merlot, Cabernet Sauvignon, Syrah, Grenache and Braquet. The wine is made in the same as it has always been made over the past two millennia. The degree of maturity of each grape variety is assessed every year just before the harvest. This determines which proportion of each grape variety that will be used for the vintage. After the fermentation process, the wine is transferred into transparent glass urns and are then exhibited outdoors to mature and to stabilize for 3 months. The wine is then brought inside and put into oak barrels from Bordeaux for another 12 months' storage before being bottled. The wine is perfectly natural and is produced organically. No additives have been added and the wine is not filtered.

Presentation of the vineyard
Domaine des hautes Collines de la Côte d'Azur is not only a winery where good wine has been made for thousands of years , it is also an equally adorable as unique place near the village of St Jeannet , located on the hills above Nice in southern France. The winemaking in St Jeannet was initiated by the Romans already 2000 years ago and even until the 1960s , you could enjoy the magnificent postcard view from St Jeannet , with view over the wineyards and the azure blue sea in the background . Today, Domaine des Hautes Collines de la Côte d'Azur , is the only remaining vineyard in St. Jeannet , but for the nostalgic , it is still today possible to relive the image of St. Jeannet 's vineyards in the Hitchcock movie " To Catch a Thief : In the beginning of the film , Cary Grant stands as front man in front of the beautiful vineyards . Today it's Georges Rasse who along with his 92 -year-old father, René ( who by the way was the one who refused to sell his land in the 60's ) that proudly represent what is left of the more ancient vineyards of St Jeannet. The wine is made in an ancient and unique way. The fermented wine is poured into transparent glass urns placed outdoors completely at the mercy of the weather. Neither light, cold or heat affect the age-old process to allow the wine to mature outdoor. Not only that it is a delight for the eyes to see all the winefilled urns lined up outside , it all has a function since staying outdoors helps to stabilize the wine and create the typical aromas in wine from St Jeannet . The stabilization and clarification process is then all natural and the wine has absolutely no additives. The bottle labels are unique for each vintage and it's Georges brother Denis who is the artist. The big vintages are represented by very colorful and detailed labels , smaller vintages have less colorful labels. The vineyard has only 4-5 hectares of land and the wine is produced almost manually. An amazing winery that has its evident place in the wine cellar.
Dark red color, almost black, with purple hues. A pleasant aroma of cherries, light bitter kernels, spices and leather. A faint smell of smoke. We find these flavors even in the taste, accompanied with noble tannins with good potential. Can be drunk now, but can also be stored a few years to soften the tannins.
