Château Simone - Red
The red Château Simone is made from 45% Grenache, 30% Mourvèdre, 5% Cinsault, and 20% other grape varieties such as Syrah, Castets, Manosquins, Carignan and various Muscat varieties. The grapes are harvested by hand and sorted immediately before being loaded and carried away into baskets of 40 kg. Once in the cellar, the grapes are sorted again and removed from their clusters (egrappage). The grapes are lightly pressed so they crack (foulage). The vinification is done with natural yeast in small steel tanks for 15-21 days with stirring occasionally (remontage). The storage is done on oak - first in larger "foudre" for 8 months, then for 1 year on oak barrels of different ages. No filtration.

Presentation of the vineyard
Château Simone is located in Meyreuil in the small Provençal appellation of Palette, located 4 km outside the town of Aix-en-Provence. Château Simone is one of 4 vineyards included in the 45-hectare micro-appellation. The beautiful main building was basically a bastide belonging to Les Grandes Carmes d'Aix, which the Rougier family bought in 1830. Jean Rougier renovated the vineyard after the phylloxera disaster and he also contributed to the creation of the Palette appellation approved in 1948. The winery is located on the north side of the Montaiguet massif, in protection of the wind and favored by a special microclimate. Several unfamiliar grape varieties arecultivated in the vineyard such as téoulier, durif, castet as well as the white terret bouret, pascal, aragnan and colombard.
A ruby ??red color. Mature complex and subtle aromas of blackberries and smoky bacon. The palate is rich andfull-bodied with great freshness and present tannins. A lovely red wine that wins to be stored for a couple of years and be served to a daube provençale or a T-bone steak.
