Château Simone - Red
The red Château Simone is made from 45% Grenache, 30% Mourvèdre, 5% Cinsault, and 20% other grape varieties such as Syrah, Castets, Manosquins, Carignan and various Muscat variants. The grapes are harvested by hand and sorted immediately before being loaded and transfered in 40 kg baskets. Once in the cellar, the grapes are sorted again and picked from their clusters (égrappage). The grapes are lightly pressed so they burst (foulage). The vinification is done with natural yeast in small steel tanks for 15-21 days with occasional stirring (remontage). The storage is done on oak - first in larger "foudre" for 8 months, then for 1 year on oak barrels of different ages. No filtering.

Presentation of the vineyard
Château Simone is located in Meyreuil, located in the small Provencal appellation Palette, 4 km outside the city of Aix-en-Provence. Château Simone is one of the 4 independent wineries representing the 45 hectare micro-appellation. The beautiful main building of Château Simone was originally a bastide belonging to Les Grandes Carmes d'Aix, that the Rougier family bought in 1830. Jean Rougier became the person who restructured the vineyard after the phylloxera disaster and contributed to the creation of the Palette appellation, approved in 1948. The vineyard is located on the north side of the Montaiguet massif, in protection of the mistral wind and favored by a particular microclimate. Several lesser known grape varieties are cultivated such as téoulier, durif, castet and the white terret bouret, pascal, aragnan and colombard.
A ruby ??red color. Mature complex and subtle aromas of blackberries and smoked bacon. The taste is rich and full of great freshness and present tannins. A delicious red wine that wins on a couple of years storage. To pair with a daube Provençale or a T-bone steak.
