Guilhem from Moulin de Gassac is made from 40% Syrah, 30% Grenache and 30% Carignan. The grapes are harvested and then picked from their bunches. The vinification is made according to the classic method. The fermentation lasts for 10-12 days at 25-30 ° temperature. The wine is then stored for 5-6 months in steel tanks before being bottled.

Presentation of the vineyard
Mas de Daumas Gassac needs no introduction for those who are interested in wine from the Languedoc. Véronique and Aimé Guibert started the winery in 1970 which is today considered as one of the best "Cru"- wines in Languedoc. Moulin de Gassac is the vineyard's everyday, but selected wines, produced under the same requirements as the exclusive wines of Mas de Daumas Gassac. The winery is conducted in the most exposed areas north of the city of Sète, more precisely in Villeveyrac for red wines, while the vineyards for the white and rosé are located in Pinet, along the banks of the Etang de Thau. The ambition of Moulin de Gassac is to make wines which express the typical "Languedoc terroir" and to create a unique and elegant style by mixing typical grape varieties from Languedoc with varieties originating from Bordeaux.
An intense and deep red color. The nose has an aromatic complexity with notes of red fruit and spices. The palate is smooth and fruity. Fine soft tannins, a wine with finesse. The finale is long, slightly sweet and with a slightly rustic mouthfeel signing the wine's "Terroir". A red wine to serve with very varied meals.
