La Jasse Castel - "La Jasse" 2012 red
"La Jasse" from La Jasse Castel is an organically grown red wine from the appelationen Languedoc - Terrasses de Larzac, made from 70% Syrah-, 20% Grenache- and 10% Carignan grapes. The harvest is done manually and the fermentation is made slowly in steel tanks. The wine is then stored in oak barrels for one year - not to enhance the tannins, but the round of the natural tannins through micro-oxygenation (micro supply of ogygene through the oak barrels).

Presentation of the vineyard
Domaine La Jasse Castel is located in Montpeyroux. The owner of the winery is Pascale Rivière who created the vineyard in 1998. Pascale was previously a journalist and became a wine grower, more or less by chance. Today, almost 20 years later, she produces Languedoc winesr from the prestigious areas of Montpeyroux and Terrasses de Larzac. Her wines are regularly mentioned in both the French and international press.
A dark ruby red color. Powerful and complex aromas of ripe blackberries, of bitter orange peal and cocoa. Some hints of licorice, violets and spices. A well-balanced fruity taste with some freshness and minerality. To be drunk lightly chilled together with a lamb steak, or to try with exotic food.
