Château de l'Herbe Sainte - Prestige - Minervois - Red

Prestige from Château de l'Herbe Sainte is a red wine made from 75% Syrah, 10% Mourvèdre, 9% Carignan and 6% Grenache. The grapes are separated from the clusters immediately after the harvest and are fermented per grape variety at controlled temperature. Then follows the malolactic fermentation. The final wine is then composed. The wine is lightly clarified and filtered before being bottled.

Presentation of the vineyard

Domaine de l'Herbe Sainte is located between Mirepeïsset and Sallèles-d'Aude, just north of the town of Narbonne in the Minervois Appellation. Herbe Sainte means "sacred herbs" which refers to the spice herbs that grow in the vineyard's surroundings and which have previously been used as medicine and which probably contribute to the "terroir specifities" of the wines. The vineyard is owned by the Greuzard family, originally from Burgundy, but who came to the Languedoc region in 1980. Land has gradually been purchased and today Domaine de l'Herbe Sainte represents 60 hectares of farmland.

Sommelier's advice

A strong pomegranate color. The nose has fruity hints of cherry and blackberry, but also of olives as well as spicy notes of herbs from "la garrigue" and black pepper. The palate is straight and generous, silky with fruity tones. Aromas of black berries, some notes of olives and cocoa. The tannins are round and silky, but a wine with good structure and intensity. Good length. to pair with an entrecôte, beef fillet, game meat or with the cheese tray.
