Domaine Garnier & fils - Chablis 1er Cru "Fourchaume"
Chablis from Domaine Garnier & fils is made from 100% Chardonnay grown in the municipalities of Fontenay-Prés-Chablis and Maligny, belonging to the climate "Fourchaume". The harvest is done manually and the alcohol fermentation is made with natural yeast at 22 ° C, followed up by the malolactic fermentation. 60% of the wine is then stored on its lees in large oak tanks (foudre) and 40% on oak barrels (demi muids) for 12 months. Then, a further 4 month storage on steel tank before bottling.

Presentation of the vineyard
Domaine Garnier & Fils was created in 1985 and is run by the two brothers Xavier and Jérôme. The winery is located in Ligny-le-Châtel, but wine is cultivated in several different areas. The total surface comprises 24 hectares of land. All appellations are represented, such as Petit Chablis, Chablis, Chablis 1er Cru and Grand Cru. The style of the wine making is based on focusing on fruit and terroir and allowing nature to take care of the process as much as possible, which means for instance that natural fermentation is used.
A golden yellow color with green shades. The nose is discreet at first, but then opens with hints of spices and hazelnuts. The palate is soft and elegant with great finesse. A fresh fruity attack with lovely acidity and perfectly dosed elements of oak. A great Chablis 1er Cru to pair with a fish and seafood terrine.
