Chablis from Domaine Garnier & Fils is made from 100% Chardonnay grown in the municipalities of Ligny-Le-Châtel, Maligny and Villy. The fermentation is carried out for 150 days with natural yeast at 22 ° C, including the malolactic fermentation. The wine is then stored on its lees in steel tanks for 11 months. Clarification and filtering before the wine is bottled.

Presentation of the vineyard
Domaine Garnier & Fils was created in 1985 and is run by the two brothers Xavier and Jérôme. The winery is located in Ligny-le-Châtel, but wine is cultivated in several different areas. The total surface comprises 24 hectares of land. All appellations are represented, such as Petit Chablis, Chablis, Chablis 1er Cru and Grand Cru. The style of the wine making is based on focusing on fruit and terroir and allowing nature to take care of the process as much as possible, which means for instance that natural fermentation is used.
A golden yellow color with green hues. The nose is floral, mainly with hints of white lilies. The palate is fruity and full, but follows up with crispy tones of grapefruit. It's all wrapped up in pleasant elements of sea salt. An elegant Chablis to serve for varied fish or seafood dishes
