Cave Saint Désirat - St Joseph Cuvée Septentrio 2012 Red

St. Joseph Cuvée Septentrio is made from 100% Syrah grapes, harvested manually at controlled perfect ripeness. The grapes are put in baskets and are then immediately transferred to the wine cellar. The grapes are let to macerate for 3-4 weeks before the fermentation starts at 30/32 °C temperature. The malolactic fermentation then follows and the finished wine is transferred into stealcovered concrete tanks and is stored there over the winter. The wine clarifies naturally during this time. After a few months, the wine is passed over into oak barrels for further storage.

Presentation of the vineyard

Caves Saint-Désirat is a good example that also wine from cooperatives can be really good. St-Joseph and Condrieu wines are mainly produced here , but also wines from the Côtes-du-Rhône and Ardèche appellations can be found in the wine portfolio. Caves Saint-Désirat was created in 1961 and today there are more than 300 wine-producing members. Since the merger with the Caves Sarrat, the cooperative represents 600 hectares of vineyards and about 50% of the total St. Joseph wineproduction. Quality and modernity are the leitmotifs of the winery and that suits us very fine

Sommelier's advice

Dark ruby color with purple hues. Complex aromas of ripe blackberries especially with hints of vanilla and some undergrowth. A light but in the same time concentrated and fruity taste. Round and full-bodied with some roast aromas from the oak barrels. Soft tannins and a long ripe final. A well-made wine to serve at 16-17 ° with red meats, game or with cheeses.
