Les Voconces from Camille Cayran is a red Cairanne made from 79% Grenache vieilles vignes, 1% Mourvèdre, 5% Carignan and 15% Syrah. The grapes are harvested manually and are mixed together to provide complexity right from the start. The grapes from the selected areas have been grown in garrigue vegetation, which provides structured wines with aromas of mature red berries that develop tones of tapenade and black spices (pepper, cloves ...). The wine production is of traditional mehod with little daily remontage. The fermentation lasts for about 3 weeks to allow the rounding of the tannins, as well as giving the wine concentration and fruitiness. The wine is stored in concrete tanks for 18 months before bottling.

Presentation of the vineyard

Camille Cayran is a wine cooperative in Cairanne representing 80 small winegrowers since more than 80 years. The wines produced, include several of the major appellations in southern Côtes-du-Rhône, such as Châteauneuf-du-Pape, Gigondas, Vacqueyras and Cairanne. Tradition is an important concept and the goal is as most as possible to respect the fundamental values, which means as a wine grower to act like a "gardener of his treasure" Most of the production is organic.

Sommelier's advice

A dark carmine red color. The fragrance is fresh and fruity with hints of mint and some burnt tones, garrigue, black olives and even some black currants. The palate is powerful, but with finesse. Primarily with aromas of ripe crushed, cherrie blended with spicy elements. Tannins with nice structure, but this is a powerful Cairanne ! To pair at 17-18 ° C to a magret de canard with green peppers, pork fillet with tapenade, chili con carne or a lamb curry.
