Presentation of the vineyard
The Ayala wine house was created in Aÿ in 1860 by Edmond-Louis Gonzague de Ayala, son of a Colombian diplomat and Berthe-Gabrielle d'Albrecht. The wines got a quick success and Fernand, Edmond's brother, establishes himself in England to stimulate the sales and Ayala became in the early 20th century court supplier of both the English and Spanish court. The wine house was bought in 2005 by the Bollinger family.
Bright golden color with a rich bubble string. The nose is open and expressive with hints of citrus, flowers and fruit with white meat. Well-balanced plalate that combines freshness and "winyer" notes, fruit and a good length. A rather low-dosed champagne to pair with most type of food !
