Jaffelin - Saint Romain - White
Saint-Romain is made from 100% Chardonnay grapes. The grape juice is pressed immediately after the harvest and macerate for 24 hours. The fermentation then starts in oak barrels at a relatively low temperature (17 °). The finalized wine is raised for six months in oak barrels before being bottled.

Presentation of the vineyard
Jaffelin is often considered to be the smallest of the great wine houses of Burgundy. It all started in 1816 when the two brothers Charles and Henri started to make wine and reconducted the concept of their father (also him a winegrower) "Burgundy and only Burgundy ". Today, Jaffelin is located in the middle of the historic part of Beaune and both the winemaking and the wine cellars are located here in the prestigious "Caves du Chapitre" which dates back to the 1100s.
A straw yellow color with golden hues. An elegant fragrance of citrus and white flowers, some mineral elements. A balanced flavor, also with some crispy minerality. Can be stored an extra year. Goes well with a salmon carpaccio or with a plate of seafood.
