The wine production and storage of the wines are mainly done in temperature controlled stainless steel tanks, which makes it possible to mix modern technology and traditional methods. Chablis Vieilles vigne is partially vinified on oak barrels (of which 5% new barrels) and is stored 12 months on its lees with regular stirring (batonnage).

Presentation of the vineyard

The Domaine Colbois is located in the Auxerrois district of Burgundy, more precisely in Chitry. It's a family estate of winegrowers since four generations. The property includes today 20 hectares of vineyards located in Chitry and Chablis. The grapes are used for the production of Burgundy Aligote, white, red and rosé Burgundy Chitry, Chablis and Chablis Premier Cru. The agriculture is conducted in respect for the nature.

Sommelier's advice

Chablis Vieiiles vignettes from Domaine Colbois has a pale yellow color with gray hues. The nose is first dominated by roasted and grilled tones from the oak barrel storage, but gives space for hints of white and exotic fruits. The palate is soft and round, very pleasant, thanks to the oak barrel storage. The final ends up in a very nice combination of roasted / grill and vanilla in symbiosis with the acidity and some fat mouthfeel. A lovely Chablis to pair with a pike-perch fillet with butter roasted chanterelles or as a very good alternative to tasty cheeses.
